ARROZ CON LECHE

(Yields 5-6 portions)

Ingredients

  • 230g (1 Cup) White Rice

  • 500ml (2 Cups) Water

  • 500ml (2 Cups) Milk

  • 340ml Evaporated Milk

  • 250g Condensed Milk

  • 1.5 Cinnamon Sticks

  • Vanilla Extract (Optional)

  • Raisins (Optional)

Step by step

  1. Rinse the rice under cold water until the water runs clear. In a pot, bring the water to a boil. Once boiling, reduce the heat to medium and add the rice and cinnamon.

  2. Cook the rice, stirring constantly, until the water is fully absorbed and the rice is tender, taking care to prevent it from burning.

  3. Once the water has been absorbed, add milk to the pot and allow it to simmer over medium heat. Stir frequently to ensure the rice does not stick to the bottom of the pot.

  4. Once the milk is almost evaporated, Incorporate both condensed milk and evaporated milk into the mixture, stirring well to combine.

  5. If desired, add raisins.

  6. Remove from heat and let the mixture cool slightly before serving.

  7. If desired additional milk can be added to change consistency.
